Gwyneth Paltrow says she’s no longer afraid of carbs. The Oscar-winning actress and wellness entrepreneur has revealed that she’s gone back to enjoying foods she once shunned — including pasta, cheese, and sourdough bread — after years of sticking to restrictive diets like paleo and macrobiotics.
Paltrow made the revelation on her latest Goop podcast, admitting that her once “hardcore” approach to clean eating has softened. She reflected on a phase when she was “obsessed” with ultra-healthy living, inspired largely by her father’s battle with throat cancer. That personal journey, she said, led her deep into the world of wellness, and she eventually adopted macrobiotic and paleo eating styles.
Her strict food choices were, at one point, entirely free of dairy, sugar, and processed ingredients. “I might have got a little didactic about it,” she admitted, explaining how she once believed that hydration and whole foods could be the magic key to better health for herself and her loved ones. “I felt so good, I wanted to share that with my dad, my friends and family,” she said.

But now, Paltrow says she’s more flexible. “I’m getting back into eating sourdough bread, and some cheese — there, I said it,” she joked. “A little pasta after being strict with it for so long.” She noted that while she still values fresh, whole foods, age and health complexities have changed how she views food and inflammation.
The change is not just personal — it also has public health advocates nodding in approval. UK-based dietitian Priya Tew welcomed the shift, describing it as a positive step away from a “very restrictive diet.” Tew emphasized the importance of carbs in a healthy diet, noting that they offer essential nutrients, energy, and enjoyment.
“Nutrition research shows us that cutting out whole food groups is not good for our overall health,” Tew told the BBC. “We need diversity and variety to help us meet all our nutritional needs, to bring taste into our diets and to also bring pleasure.”
Paltrow, who stepped back from acting in recent years to focus on her lifestyle brand Goop, is also preparing for a return to the big screen. She’ll be starring opposite Timothée Chalamet in the upcoming sports action film Marty Supreme.
After more than two decades of public fascination with her wellness choices, it seems Gwyneth Paltrow is finally finding balance — and not shying away from the joy of good bread.
